Single edged for me, for the same reasons Psychlonic outlined. Also it's easier to cut yourself with a double edged knife when using it as a tool or even when handling it in the dark. More room to slip or fuck up in some other manner, just something to keep in mind.

Extensible baton for me, unless I happen to take a screwdriver or something else that can be used as a weapon. No point in having 2 things that can serve a similar purpose weigh you down. I don't always have it with me though, just most of the time.
